What’s Included?

Estimated take-home beef: 360–440 pounds per whole share. This is a planning estimate for a 900–1,100-pound animal using roughly 40% take-home yield. Your share offers steaks, roasts, ground beef, and other cuts; examples below are not a guaranteed cut list or package count.

  • Steaks — examples may include ribeye, sirloin, and strip steaks or tenderloin, depending on your cutting choices.
  • Roasts — examples may include chuck, arm, and round roasts.
  • Ground beef — packaged in sizes you arrange with the butcher.
  • Other cuts — ask about brisket, short ribs, stew meat, and similar options.
  • Bones and organs — ask the butcher about soup or marrow bones, liver, heart, and other available items. These are not automatically included.

You and the butcher work through the cut sheet together. Discuss steak thickness, roast size, package size, and which cuts you would prefer to keep or grind. Some choices replace others, and availability depends on the animal and the butcher’s services. Confirm your requests with the butcher before cutting begins.

Take-Home Beef & Freezer Space

Plan for approximately 360–440 pounds of packaged beef and 12–18 cubic feet of freezer space for a whole share.

Actual take-home weight may fall outside this estimate. Animal size, fat trimming, aging, and bone-in versus boneless cuts affect yield. Freezer space also depends on packaging and organization.

Your beef price is based on hanging weight, not packaged weight. Your remaining beef balance is the animal’s hanging weight × $5.50, minus your $1,000 deposit. Processing fees are additional.
